As we face uncertain times such as now, we felt it was right to launch Sukapop Sap!, a digital online project to share stories and celebrate the foods created by the Lao community during their immigration and resettlement journey. “Sukapop Sap” loosely translates into English as “delicious health” and embraces the proverb “necessity is the mother of invention”, so we’re highlighting dishes from those created in refugee camps to remixed recipes with Lao & American ingredients. We’re hungry for these often untold stories of adaptability and survival, and invite you to our table.
